Sugar Free Banana Cake

Sometimes your sweet tooth gets more than it bargained for when you consider the amount of sugar you bake with to create these tasty little sweet tooth remedies. Health problems, cavities, plummeting health all go hand in hand with sugar packed baked goods. Why not try baking without sugar? Going sugar free doesn’t have to mean that you don’t get to eat sweets, but it does mean that you’re much more health conscious and your body will thank you in the long haul. We discovered a great sugar free banana cake that you’re sure to love, even if it doesn’t have sugar.

Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons baking soda
  • ½ teaspoon cinnamon
  • 4 medium bananas, cut into medium pieces
  • 1 egg
  • 1/3 cup vegetable oil
  • ½ cup unsweetened orange juice
  • ½ cup raisins (optional)
  • ½ cup chopped walnuts (optional)

Baking Instructions

Begin by preheating your oven to 350 degrees. In a large mixing bowl, combine the whole wheat flour, baking powder, baking soda and cinnamon. Stir it all for 1-2 minutes and blend it thoroughly. Once blended well, place your banana chunks in a blender where you will puree until smooth.

Next, add your banana puree to the flour mixture, and mix together in an electric mixer thoroughly until well blended. Once well blended, slowly add in the remainder of your ingredients, including raisins and walnuts.

Take a loaf pan and grease thoroughly with butter or cooking spray. Pour your banana batter into the loaf pan, and bake at 350 for roughly 45 minutes. A knife inserted into the center of the cake should come out clean when it’s done.

Allow bread to cool on a wire rack, but serve warm if you can. Enjoy with a hot cup of coffee for a truly delectable sugar free treat!
