Banana and Blueberry Muffins

There’s nothing quite like starting your day with a cup of coffee paired with a hot pastry that crumbles sweetly in your mouth. Enjoying a spread of tasty muffins is a great way to get your day started – as long as they’re prepared well and made from scratch! Muffins can be tough, processed store bought muffins taste overly sweet, and lack any nutritional benefit. On the other hand, homemade muffins often tend to come out dry and crumbly. However, we’ve found the middle ground with out homemade banana blueberry muffins! These muffins will come out hot, moist and loaded with flavor.

Your sweet tooth will be satisfied and your belly will be full after one of our hearty banana or blueberry muffins – sure to leave a huge smile on your face, and coming back for more later in the day.

Ingredients 

4 large ripe bananas
¾ cup sugar
1 egg, beaten
1/3 cup melted butter
1 cup fresh blueberries
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups flour

Instructions

Begin by preheating your oven to 375 degrees. Next, mash your bananas in a large mixing bowl until they’ve reached a gooey texture with minimal lumps. Next, add your sugar and your egg to the banana, and mix in thoroughly. Add your butter, and then fold in your blueberries gently. It’s okay for some blueberries to burst as you fold them in, but be gentle in an effort to preserve some.

In a smaller bowl, combine your baking soda, baking powder, salt and flour. Once thoroughly combined, gradually add to your banana mixture, and beat on low until the dry ingredients are totally mixed in with the banana mixture.

Set your mixture aside, and grease a muffin pan (with 12 cups) thoroughly to avoid the mixture sticking in the oven. Evenly distribute the batter amongst the 12 cups, and bake in the oven for 15-20 minutes.

Serve while hot with a cup of coffee, and feel free to re-heat later in the day when you come back for more. Breakfast snacks never tasted so good!
