Ingredients

½ cup semi-sweet chocolate chips
1 stick of unsalted butter
¾ cup white sugar
3 large eggs
½ cup unsweetened cocoa powder
¼ cup powdered sugar

Cooking Instructions

Begin by preheating your oven to 375 degrees and then greasing a round baking pan with butter. Once the pan is thoroughly greased, you’ll want to line the bottom of the pan with wax or parchment paper to prevent sticking.

Over low-medium heat, get a small pot of water set to boil. When it begins to boil, lower the heat so that the water is only simmering slightly. Set a metal bowl over top of the pot of boiling water and dump the chocolate chips in. Stir the chips constantly, and then as they begin to melt, add in the butter. Continue stirring until the chips and butter have formed a melted, smooth liquid without any chunks. Remove the metal bowl carefully from the pot, and whisk in your sugar. Set aside. Crack your eggs into another smaller bowl, one at a time, beating lightly before dropping them into the chocolate and sugar mixture. Once all three eggs have been added, whisk the mixture together well and pour the batter into your greased pan.

Bake the cake in the middle of the oven for roughly 20-30 minutes, or until the top is crispy. Remove the cake from the oven, and test to see if it’s done by inserting a knife into the center of the pie and then pulling it back out; if it comes out clean, it should be done. Sprinkle the top of the flourless cake with the powdered sugar, and allow the cake to cool on a rack for 10 minutes until you’re ready to slice into the cake and serve.
