Mediterranean Breakfast Sandwiches

Ingredients

One ciabatta or other fresh roll

2 egg whites

1 teaspoon butter

1 teaspoon chopped fresh herbs (parsley, rosemary, and basil)

1-2 slices cheese (provolone, muenster, Monterey jack or any other)

1 tablespoon pesto (freshly prepared or store bought)

Small handful of spinach

7-8 grape tomatoes

1 tablespoon extra-virgin olive oil

Salt and pepper to taste

Directions

  • In a small skillet, melt butter over medium heat. Add egg whites and season with salt and pepper. Sprinkle fresh herbs on the egg. Cook for 3-4 minutes until the egg is cooked through, flipping once.
  • Preheat the oven to 400 degrees F. Slice the grape tomatoes lengthwise and place on a baking sheet. Drizzle them with olive oil and season with salt and pepper. Toss to coat evenly. Roast in the oven for 20 minutes or until the skins appear wrinkled. Set aside.
  • Now split the ciabatta roll in half and place cheese on the bottom half. Toast in a toaster oven. Spread pesto on the top half of the roll.
  • Place the cooked egg on the bottom half of the roll over the cheese. Layer on the spinach and the roasted tomatoes. Enjoy!
