Kale-Goat Cheese Frittata

Ingredients

  • 2 cups of chopped kale
  • 1 thinly sliced garlic clove
  • 8 huge eggs
  • ¼ teaspoon of salt
  • ¼ teaspoon of red pepper flakes
  • ½ teaspoon of dried thyme
  • Dash of ground black pepper
  • 3 tablespoons of olive oil
  • ¼ cup of crumbles goat cheese

Directions

  1. Preheat your oven to 350 degrees F. To obtain 2 cups of kale, take out the leaves from the ribs. Wash, dry the leaves, and slice them into strips (1/2-inch wide).
  2. Use a 10-inch nonstick skillet to cook the garlic in a tablespoon of oil for 30 seconds. Ensure the oven is set at medium-high heat. Include the red pepper flakes and kale. Cook for 1-2 minutes until the kale wilts.
  3. Beat the eggs with the pepper and salt in a medium bowl. Add the thyme and kale to the egg mixture. As the egg mixture sets in, run a spatula around the skillet’s edge, lifting the mixture so the uncooked segment flows underneath. Continue cooking and lifting the edge until the mixture is nearly set but still moist and glossy. Ensure the frittata cooks evenly.
  4. With the use of a 12-cup muffin tin, use the outstanding 2 tablespoons of oil to grease 8 of the cups. Alternatively, you could use non-stick spray or butter if you prefer.
  5. Drizzle the tops with goat cheese (crumbled).  Put in the oven under broiler and allow it to bake until they’re set in the centre. This should take approximately 10-15 minutes. Allow the top of the frittata to cook completely while turning brown slightly.
  6. Use a heatproof spatula to loosen the frittata from the pan. Slide the frittata carefully onto a platter or plate.
  7. Slice into wedges and serve. Ideally, you should eat it warm from the oven or within the following day. However, you can keep the leftovers refrigerated and reheat them for up to 1 week.
