Mediterranean Tuna Pasta

Ingredients

  • 2 tablespoons of olive oil
  • ½ tablespoon of minced garlic
  • 1 medium-sized onion
  • 4-5 anchovy fillets

  • ¼ teaspoon of red pepper (crushed)
  • ½ cup of kalamata olives
  • 2 medium squash (yellow, green)
  • ¼ bunch of fresh parsley
  • 1 (28oz.) crushed or can diced tomatoes
  • 12oz. tuna steaks
  • Black pepper (cracked)
  • ½ lb. of pasta

Preparation

  1. Chop the onion and cook it in a huge skillet together with the anchovy filets, minced garlic, and olive oil. Cook until the onions attain a soft texture and are transparent. Ensure the anchovies also dissolve.
  2. Meanwhile, dice the squash into quarters or half rounds. Put the squash into the skillet and continue sautéing until they’re slightly softened.
  3. Put the can of tomatoes, olives (roughly chopped), basil, red pepper (crushed), black pepper (cracked) and salt. Make sure you stir to combine the ingredients. Dip the tuna steaks into the sauce. Put a lid on top and allow it to simmer until the tuna’s cooked through. You’ll see the tuna turn from mauve to white while it cooks. Once you notice it’s white, then it’s done.
  4. Allow the tuna to poach in the sauce.
  5. Meanwhile, in a huge pot of boiling water, cook the pasta until it becomes tender but firm. Allow the pasta to cook for 8-10 minutes or until al dente. It’s best you use a timer in order to follow the cooking time precisely as indicated on the package. When cooking pasta, the temperature of your stove should be high enough to bring the water to a rapid boil. Ensure you maintain the boil throughout the cooking duration. When the pasta is ready, drain it in a coriander.
  6. When you finish cooking the pasta and tuna, lift the fish from the skillet gently. Add the parsley (freshly chopped) and pasta.
