Blueberry-Lemon Breakfast Pops

Popsicles for breakfast? Why not?

What makes blueberry-lemon breakfast pops a must have delicacy in every home is that, they are:

a) Rich in Vitamin C hence plays a key role in enhancing one’s immunity

Ingredients:

In preparing these super delicious and creamy pops, you’ll need:

a) Three cups of fresh or frozen blueberries

b) Three tablespoons of lemon zest

c) Two cups of milk

d) Two tablespoons of cornstarch

e) Two tablespoons of honey

f) One tablespoon of lemon extract

Directions:

Start by combining the two cups of milk with the two tablespoons of cornstarch and, whisk them together till there are no more cornstarch lumps. Next, add in the honey, lemon extract and lemon zest.

Over medium high heat, bring the milk mixture to boil and, stir till the mixture starts to thicken. This is bound to take five minutes at most. Once the mixture has started to thicken, pour it into a bowl and let it cool for a few minutes.

Next, fill the popsicle molds with the blueberries and pour the above pudding over them. To avoid getting everything messy, use a funnel. After doing all this, the only task remaining will be to stick in the popsicle sticks and place them in the freezer for at least six hours.

The other way of making your blueberry-lemon breakfast pops requires that you have the following ingredients:

a) Three cups of blueberries

b) Three tablespoons of pure maple syrup, sugar or honey

c) A cup of low-fat yogurt

d) A tablespoon of lemon zest

e) Juice from one lemon

f) Kosher salt

Directions:

Combine the blueberries with the yogurt, lemon juice, lemon zest, maple syrup/sugar/honey and a pinch of kosher salt before pureeing them in a food processor till smooth. Finish off by pouring the mixture into popsicle molds and freezing them for six hours or overnight.

Using low fat yogurt is highly recommended as it adds in more nutrients (proteins) into the pops as well as helps in making them creamier.

About the Blueberry-Lemon breakfast pops

For you to have these pops ready for breakfast, you’ll need to make them beforehand – preferably the night before. Plus, you need not worry about them being too cold and hard for, once you put them in the mouth, they’ll end up softening up really fast hence making them a lot easier to eat.

Although it takes 6+ hours before you can get to enjoy your popsicles, it only takes a maximum of five minutes to get them ready.

So is it okay for someone to take these pops instead of their usual breakfast? Though they are in many ways similar to having a smoothie, it’s a lot better to have your usual breakfast and have these undeniably refreshing pops as you head out of the door.
