Stew season is officially here! On cold days, there is nothing that I want more than a heavy stew to warm me up with the thick sauce and the great flavors. Here is a recipe for a Chorizo and White Bean Stew that is recommended by many. For those that do not have Chorizo, you can feel free to substitute it out for sweet sausage or hot sausage, whatever you prefer. Also, if you are interested in keeping your sodium levels low, you can use low sodium chicken broth, as opposed to the normal broth.

What You Will Need to Make Chorizo White Bean Stew
Extra virgin olive oil
1 ¼ pounds of fresh Mexican Chorizo
1 ½ Large Onion
5 cloves of garlic
2 sprigs of Thyme
30 ounces of canned white kidney beans
3 Cups of chicken broth
12 cups of baby spinach
salt
Pepper
How To Make Chorizo White Bean Stew
- In a large skillet, over medium heat add 1 tablespoon of oil.
- Using a fork, quickly poke holes in your sausages, going about half way through. This will let the heat in to cook the sausages fully.
- Add the sausages to the skillet and cook for approximately 16 minutes. You will know when they are done when they are browned and cooked completely through.
- Remove sausages from the skillet and put them on a side plate.
- Add 1 tablespoon of oil into the skillet that you just used to cook the sausages and add your onion, thinly sliced, and your garlic cloves, finely chopped, and the Thyme sprigs. Cook for 7 minutes, or until the onions are soft.
- Next, add the beans to the skillet.
- Add the chicken broth to the skillet.
- Use the back of a wooden spoon to squish and mash a few of the beans, to make your sauce thicker.
- Cook for 10 minutes, or until the sauce is at the desired consistency.
- Next add salt and pepper, to your liking.
- Add in spinach cup by cup.
- Cook until the spinach is fully wilted, usually taking about 3 minutes.
- Slice the sausages and add to the white bean sauce.
- Use a ladle to remove stew and put in serving bowls.
- Season with more salt and pepper if desired and enjoy!
Whether you are looking to make something for the family on a weeknight or you are preparing for dinner guests this fall or winter season, this recipe is great to have on hand. For extra flavors and flare, try seasoning your Chorizo White Bean Stew with paprika before serving. This will give a little extra spice to your stew, however some people do not like the flavor of paprika, so I did not include it in my recipe.
