Warm Up With This Short Rib Pot Pie Recipe

What you will need to make Short Rib Pot Pie

* Pillsbury pie crust ready dough
* 3 pounds of boneless beef short ribs
* Salt
* Pepper
* ¾ cup all purpose flour
* 3 tablespoons of extra virgin olive oil
* 12 oz of frozen pearl onions
* 5 garlic cloves
* 3 tablespoons of tomato paste
* 1 ½ cup of red wine
* 3 sprigs of Rosemary
* 9 sprigs of Thyme
* Heavy Cream

How to Make Short Rib Pot Pie

  • First, you have to make your crust. Remove pie crust dough from the packaging. There should be two pie crusts per package. Grease or use cooking spray to coat your pie pan. Then, spread one of the pie crusts into the pie pan, spreading evenly. Follow the cooking instructions on the back of the pie box to cook your crust. Usually it takes about 10 minutes. Keep an eye on it because when it is golden brown, it is perfect.
  • Then, cut the short ribs into roughly two inch pieces. From here, season them with salt and pepper, rubbing flour on them as you rub on your seasoning.
  • In a greased large pot, over high heat, cook your ribs for 8 minutes. Because there are so many, you may find it easier to cook in batches. If you have a large enough pot (it would have to be very big), you may be able to cook them all at once. Once cooked, put ribs in a large bowl.
  • Next, add the thawed onions to the same pot you just used to cook the ribs in. cook and stir them until they are a golden brown color. Add salt and pepper to your liking while they are cooking. Once cooked, put these onions in a bowl.
  • Mince your garlic and then add it to the pot, cooking it over medium heat for 2 to 3 minutes.
  • Add the 3 tablespoons of tomato paste to your cooking minced garlic. Cook for 5 minutes and then add in your wine, rosemary sprigs, thyme sprigs. You will want to bring this to a boil and cook for 10 minutes.
  • Add 6 cups of water to the pot over medium to high heat and bring it to a boil. Add the short ribs once the sauce is boiling.
  • Reduce heat and let simmer for 3 hours. By this time, the ribs should be falling off the bone and falling apart. Add in the onion mixture.
  • Stir the ribs so that they get all broken up and fall from the bones. Take out the sprigs after 5 minutes.
  • Add your rib mixture to your pie crust. Fill the crust entirely with the filling. Remove the second pie crust from the package and place over the top of the filled pie.
  • Go around the edge with a fork, pressing and crimping the two crust ends together.
  • Bake at 375 degrees Fahrenheit for 1 hour.
  • Remove from oven and let cool for 7 minutes.
  • Serve and enjoy.
