Grilled Chicken Dogs with Sweet Potato Fries

Ingredients

For the fries:

5 sweet potatoes, peeled and sliced into 1/4- inch long and 1/4–inch slices

Corn starch –enough to sprinkle over and coat the fries

1/2 tablespoon paprika

2 teaspoons ground cumin

1 teaspoon garlic powder

Salt and black pepper

Olive oil- a couple of tablespoons to evenly coat the fries

For the dogs:

4 chicken hot dogs

2 ears of corn, shucked

1/4 cup finely chopped bell pepper (any color)

1/4 cup finely chopped cucumber

2 tablespoons chopped chives

1 teaspoon sugar

Juice of one lime

2 tablespoons barbeque sauce (extra for dipping)

Salt and pepper

1 tablespoon extra-virgin olive oil

4 potato hot dog buns

Directions

  • For the fries, preheat oven to 450 degrees F.
  • Line a baking sheet with parchment (or you can use a non-stick baking sheet). In a large bowl, sprinkle the sweet potatoes with cornstarch. Drizzle olive oil to coat. Sprinkle paprika, cumin, garlic powder, and salt and pepper. Toss to evenly coat all the fries.
  • Spread the sweet potatoes on the baking sheet in a single layer, making sure not to overcrowd.
  • Bake until the sweet potatoes are tender and golden brown, and crispy on the outside. Keep turning the fries occasionally so they can cook on all sides.
  • Let cool 5 to 10 minutes before serving.
  • For the chicken dogs, preheat the grill to medium high and grill the corn, turning occasionally until slightly charred.
  • Let the corn cool and then cut the kernels off the cobs. Toss the kernels with the cucumber, bell pepper, lime juice, sugar, salt, and pepper in a bowl. Add the olive oil and chives and mix.
  • Now brush the hot dogs with the barbeque sauce and grill, turning occasionally.
  • Take your potato hot dog buns, split them in half, and toast them.
  • Put a hot dog in each bun and top with the corn mixture. Serve with the sweet potato fries and barbeque sauce for dipping.

This is a yummy and healthy dish to enjoy. The chicken provides protein, and the corn mix has various vitamins and minerals. The sweet potatoes pack quite a nutritional punch too. One baked sweet potato contains over twice the amount of vitamin A required for a day. So you do not feel guilty having a lot of these addictive fries! The fat and oil content is minimum too, since the fries are baked, and not fried in oil.

For the fries, you can use panko breadcrumbs in place of cornstarch if you like- both make the fries crispy. The salty-sweet, crunchy and spicy fries go perfectly with the tangy barbeque chicken hot dogs. Together, they provide a burst of flavors in your mouth!
